Alexandre Polmard’s Angels
Sitting on a church’s steps on the famous 5th avenue, listening to some good Sinatra, on a snowy evening; while mechanically staring at people coming and going, respecting their daily routine, Alexandre was unwilling to have such a boring and scheduled life. He dreamed of excitement. At the age of 19, during his sabbatical year in New-York, Alexandre’s aspirations ignited and his life took another path.
In 2013, he followed to footsteps of his father and took over the family run business with a single challenge in mind: “change the cliché identity of breeders and butchers”. What a risky gamble for such a young entrepreneur, who wanted to become a forerunner of luxury meat, in the one hand, and who has to stick to his family historical DNA in the second hand.
A bet which Alexandre manage to win with success! Michelin-starred Chefs from all over the world cannot get enough of his “Blondes d’Aquitaine”!
Alexandre carries his heritage, and perpetuates a French know-how and tradition: from the breeding of heifers, to maturation of butcher piece and finishing with the difficulty of the “hibernation” technique. Thanks to numerous researches led by his father during the 1970s, it is Alexandre’s turn to contribute to the creation of a high-end quality meat. Put aside all your biases and prejudices regarding “barbarian” butchery and delicatessen to let a new era begin where beef is set at the same level than foie gras and caviar.
Herds reared in the vast Saint Mihiel domain, taking care of the well-being of the cows until the non-stressful slaughtering day, a maturation adapted to each pieces, and an ideal conservation technique : this where lies the Art of the Polmard House.

An Irish proverbs wisely says that “to every cows its calf; to every book its copy”. A saying well illustrating the Polmard family’s history as Alexandre is for his “Blondes d’Aquitaines” what his father was to his “Charolaises” and “Normandes”.
